Couscous with Seven Vegetables

  • Ingredients:
    • 1 cup couscous
    • 2 tablespoons olive oil
    • 1 onion, chopped
    • 2 carrots, peeled and sliced
    • 2 zucchinis, sliced
    • 1 sweet potato, peeled and cubed
    • 1 bell pepper, chopped
    • 1 cup cabbage, shredded
    • 1 cup pumpkin or butternut squash, cubed
    • 1 can chickpeas, drained and rinsed
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • Salt and pepper to taste
    • Fresh parsley for garnish
  • Instructions:
    1. In a large pot, sauté onions in olive oil until softened.
    2. Add vegetables, chickpeas, and spices. Cook for a few minutes.
    3. Pour in enough water to cover the vegetables. Bring to a boil, then reduce heat and simmer until vegetables are tender.
    4. Prepare couscous according to package instructions.
    5. Serve the couscous topped with the vegetable mixture and garnish with fresh parsley.
