Lamb Tagine with Apricots and Almonds

Ingredients:

  • Lamb pieces (such as lamb shoulder or stewing lamb), cut into chunks
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon saffron threads
  • 1 cup dried apricots
  • 1/2 cup blanched almonds
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Olive oil for browning

Instructions:

  1. Brown the Lamb:
    • In a large pot or tagine, heat olive oil over medium-high heat.
    • Brown the lamb pieces on all sides until they are nicely seared. This adds flavor to the dish.
  2. Saute Onions and Garlic:
    • Add chopped onions and minced garlic to the pot. Sauté until the onions are softened.
  3. Add Spices:
    • Stir in ground ginger, cinnamon, cumin, and saffron. Allow the spices to coat the lamb and onions.
  4. Cover with Water and Simmer:
    • Pour in enough water to cover the lamb. Bring it to a boil, then reduce the heat to simmer.
    • Cover and simmer until the lamb is tender and cooked through. This might take a couple of hours, depending on the cut of lamb.
  5. Add Apricots, Almonds, and Honey:
    • Once the lamb is tender, add dried apricots, blanched almonds, and honey.
    • Season with salt and pepper to taste.
  6. Continue Simmering:
    • Allow the tagine to simmer for an additional 15-20 minutes, allowing the flavors to meld and the apricots and almonds to absorb the delicious lamb broth.
  7. Serve:
    • Serve the lamb tagine with apricots and almonds over couscous or rice.
