Moroccan Chicken Pastilla

The most common filling is made with spiced shredded chicken, but there are variations with seafood or pigeon. Here’s a recipe for Chicken Pastilla:

Ingredients:

For the Filling:

  • 1 whole chicken, cooked and shredded
  • 1 large onion, finely chopped
  • 3 eggs, beaten
  • 1 cup ground almonds
  • 1/2 cup chopped fresh parsley and cilantro
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • Salt and pepper to taste
  • Olive oil

For the Layers:

  • 8-10 sheets of phyllo pastry
  • Butter, melted

For Garnish:

  • Powdered sugar
  • Ground cinnamon
  • Chopped almonds

Instructions:

  1. Prepare the Filling:
    • In a large skillet, sauté the chopped onion in olive oil until softened.
    • Add shredded chicken, ground almonds, spices, and herbs. Cook for a few minutes until well combined.
    • Pour in beaten eggs and continue stirring until the mixture thickens.
  2. Layer the Phyllo Pastry:
    • Preheat the oven to 350°F (175°C).
    • Brush a pie dish with melted butter.
    • Place one sheet of phyllo pastry in the dish, allowing the edges to hang over the sides. Brush with melted butter.
    • Continue layering sheets, brushing each with butter, until you have used half of the phyllo.
  3. Add the Filling:
    • Spread the chicken and almond mixture evenly over the layered phyllo.
  4. Complete the Layers:
    • Continue layering the remaining phyllo sheets on top of the filling, brushing each with melted butter.
    • Tuck the overhanging edges over the top to seal the pastilla.
  5. Bake:
    • Bake in the preheated oven for about 30-40 minutes or until the pastry is golden brown and crisp.
  6. Garnish:
    • Once baked, remove from the oven and let it cool for a few minutes.
    • Dust the top with a mixture of powdered sugar and ground cinnamon.
    • Sprinkle chopped almonds over the top for added texture.
  7. Serve:
    • Cut the pastilla into wedges and serve warm.
